This is the best recipe for lemon bars I've ever made or tasted. It comes courtesy of my friend, Shane. Hope you all enjoy!
2 1/4 cups all-purpose flour, divided
1/2 cup sifted powdered sugar (I have never actually sifted)
1 cup butter (no substitutes)
1/2 teaspoon baking powder
4 large eggs, lightly beaten
2 cups sugar
1/3 cup lemon juice (the secret is fresh lemons)

Combine 2 cups flour and 1/2 cup powdered sugar; cut in butter with a pastry blender until mixture is crumbly. Firmly press mixture into a greased 13X9 pan. Bake at 350 degrees for 20-25 minutes until lightly browned. (My oven nearly always just requires 20 minutes.)
Combine remaining 1/4 cup flour and baking powder in a small bowl; stir well. Combine eggs, 2 cups sugar, and lemon juice in a large bowl. Just use a spoon ... don't beat with a mixer (too much air gets incorporated, and they dry out). Stir in flour mixture. Pour over prepared crust. Bake at 350 for 25 minutes or until set and lightly browned. Cool completely in pan on wire rack. Sprinkle with additional powdered sugar, cut into bars. Mmm!!
